A small batch craft American Whiskey from Columbia Tennessee, from an original recipe by master maker and blender J. Arthur Rackham aka Daddy Rack (a name bestowed by his daughter).
Using corn sourced from local farmers (80%), rye (10%) and malted barley (10%) this sour mash mix is fermented for 72 hours, then filtered using the Lincoln County Maple Charcoal slow filtration process before maturing in new American Oak barrels with a light Char No.3.
No colourings or caramel are added, and before bottling, each batch of Daddy Rack goes through a second lighter Maple Charcoal filtration resulting in a smooth Tennessee Straight Whiskey.
